Breakfast Sausage Meatballs are made with ground pork and a handful of spices. Cooked in the oven they are easy, simple and come out perfect every time.

I love having quick & easy proteins on hand for busy mornings. These meatballs are easy to make over the weekend and then have on hand to reheat and throw together with breakfast for the week. Pair them with my Cinnamon Muffins or Banana Bread Muffins for a perfect protein/healthy carb combination on the go!

How To Make Breakfast Sausage Meatballs

  • Begin by preparing your baking sheet.
  • Line a rimmed baking sheet with aluminum foil and then place a wire rack on top of the foil lined baking sheet.

  • This set up lets the meatballs cook while draining off the excess grease and collecting it underneath. It also makes for very easy cleanup!
  • Next, place ground pork in a large mixing bowl.
  • Add in garlic powder, paprika, salt & pepper and blend into meat, using hands.
  • Shape pork mixture into 16 round meatballs and place on wire rack.

  • Place meatballs in the oven and bake at 400 degrees for 20-25 minutes, until meatballs reach an internal temperature of 145 degrees (I highly recommend investing in a meat thermometer).
  • Once meatballs are done, remove from oven and transfer to a paper towel lined plate to finish cooling and to soak up any remaining grease.

  • These meatballs are delicious on their own as a fast morning protein, but my favorite way to serve them is over sweet potatoes, sauteed with bell peppers and onion and served with a fried egg.

How Long Is Breakfast Sausage Good For In The Fridge?

After cooking the breakfast sausage, it can be stored in the refrigerator for up to 7 days.

Can Breakfast Sausage Be Frozen?

These Breakfast Sausage Meatballs freeze very well. Cook and cool completely and then place in an airtight container or a ziplock baggie in the freezer. When ready to eat, take out of the freezer and let thaw in the fridge or defrost in the microwave before serving.

Ingredients

  • 1 lb ground pork
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp pepper
  • 1/2 tsp salt

Instructions

  1. Prepare lined baking sheet by covering in aluminum foil and then placing a wire cooling rack on top. 

    In a large bowl, mix together ground pork with seasonings. 

    Shape pork mixture into 16 rounded meatballs and place on wire rack.

    Cook at 400 degrees for 20-25 minutes until pork reaches internal temperature of 145 degrees. 

    Remove from oven and transfer meatballs to a paper towel lined plate to cool and collect any remaining grease.
