Crockpot Cashew Chicken Recipe is better than take out! Cooked all day in an easy and healthy sauce, this chicken is bursting with flavor and bound to be a new family favorite.
If you love Chinese food, you’re going to love this healthier version that you can make at home! With ingredients you can pronounce and flavors you love, you can’t go wrong! The best part of this dish is that it can’t be served multiple ways to please everyone in your family. First, let’s get to some common questions.
It’s likely that if you are ordering cashew chicken at a restaurant or take-out, it’s not healthy, but when you make this dish at home, it can be healthy! I use better for you ingredients that not only pack in a ton of flavor, but they also make this dish grain, gluten and dairy free, but still delicious!
Yes, you can use frozen chicken in the crockpot! It makes prepping your meal easy and fast and I personally prefer cutting raw chicken that is still frozen vs letting it thaw out and have the juice run everywhere.
This sauce is incredible easy to make. You whisk together the coconut aminos, apple cider vinegar, coconut sugar, garlic, ginger and crushed red pepper and then pour over the chicken in the crockpot. The chicken cooks in the sauce all day and then you add in the raw cashews about 15 minutes before serving. The cashews will soak up the sauce and soften a bit.
This dish can be served so many different ways, but let me show you my three favorites!
The most popular way to eat Cashew Chicken is over fried rice. If you are looking for a veggie packed, gluten and grain free alternative, I highly recommend serving it over Cauliflower Fried Rice.
Another simple way to serve is over roasted vegetables. Here, I served over roasted green beans and it was delicious and so filling!
If you’re a fan of lettuce wraps, I highly suggest serving in butter lettuce!

Cut chicken into 1 inch cubes.
Place chicken cubes in crockpot and season with salt & pepper.
In a medium bowl, whisk together coconut aminos, apple cider vinegar, coconut sugar, garlic and crushed red pepper.
Pour sauce over chicken, cover and cook on low for 6-8 hours.
15 minutes before serving, add in cashews and stir well.
