Anybody else obsessed with Bark Thins? I love them. Like, you can find me sitting and eating an entire bag of them with no self control, which is exactly why I can’t buy them. So since I have banned myself from buying them, I decided I would just make them myself (because that makes sense). I love traditional bark thins, but something about this homemade version satisfies my craving so much better. They feel richer and creamier than the store bought version and one small square (ok, maybe 2) total satisfies my sweet tooth. Maybe they’ll work better for you too?

What Is In Easy Fudge

This recipe contains 6 ingredients – cocoa powder, honey, coconut oil, vanilla extract, salt and slivered almonds. 6 ingredients, that’s it!

How To Make Easy Fudge With Cocoa Powder

  • In a large mixing bowl, mix together the cocoa powder, honey and melted coconut oil. Make sure you mix slowly and carefully so that you don’t end up with a counter full of powder (trust me, I’ve learned this the hard way).
  • Once combined, add in vanilla and salt and mix well and then add in slivered almonds and mix a few more times so they are spread throughout the batter.

  • Line a 9×13 inch rimmed baking sheet with parchment paper and pour the batter onto the paper.
  • Spread the mixture out evenly. I wanted it a little on the thicker side so I spread it out, but left about an inch between the batter and the rim of the sheet.
  • Sprinkle with more slivered almonds on top and then place sheet in freezer for a least 1 hour.

  • When fudge is set and firm, remove from freezer and cut into squares.

Ingredients

  • 1 cup pure cocoa powder
  • 1/2 cup honey
  • 1/2 cup coconut oil melted
  • 1/2 tbsp pure vanilla extract
  • 1/4 tsp salt
  • 1 cup slivered almonds (plus more for sprinkling on top)

Instructions

  1. In a large mixing bowl, mix together cocoa powder, honey and coconut oil. 

    Mix in vanilla and salt. 

    Add in slivered almonds and mix a few more times till they are covered in batter. 

    Line a 9x13 inch rimmed baking sheet with parchment paper. 

    Pour batter on baking sheet and spread out evenly. I like mine a little thicker, so I leave about an inch between the rim and the fudge. 

    Place in freezer to set up for about 1 hour. 

    When firm, remove from freezer and cut into squares. 

    Store in airtight baggie or container in freezer.
