Easy Sweet Potato Casserole with Bacon

This easy sweet potato casserole with bacon comes together very quickly with a few, simple ingredients. It can even be prepped ahead of time and then popped in the oven when you’re ready.

I love casseroles because they’re quick and easy to make and serve. There are a million different ways to make sweet potatoes, but this is my new favorite. Melt in your mouth sweet potatoes coated in cheese and bacon, what’s not to love?

How to make sweet potato casserole

  • To start, prep your bacon & cheese. (If you’ve never cooked bacon in the oven, let’s change that now. Line a baking sheet with aluminum foil and lay bacon on foil. Set your oven to 400 degrees and place bacon in the oven while the oven is preheating. Check after 15 minutes and if not crispy, cook for about 5 minutes more. You’re welcome).
  • Peel & wash your sweet potatoes and then dice into small cubes.
  • Make sure your hands are clean because this recipe mixes together best using your hands instead of a spoon.
  • In a large mixing bowl combine cubed potatoes, crumbled bacon & shredded cheese.
  • Add in oil, salt and pepper and toss together till well combined.
  • Grease your 8×8 inch baking dish (I use coconut oil) and then fill dish with sweet potato mixture.
  • Dot the top of your casserole with butter, cover in aluminum foil and bake for 1 hour covered and then 15 minutes uncovered.

Ingredients

  • 2 sweet potatoes cubed, 4 cups
  • 1 cup bacon cooked & crumbled
  • 1 cup cheddar cheese shredded
  • 1 tbsp butter sliced
  • 1 tbsp olive oil
  • salt & pepper to taste

Instructions

  1. 1. Mix sweet potatoes, bacon & cheddar cheese in bowl. 

    2. Drizzle with olive oil & season with salt & pepper. Mix well. 

    3. Transfer sweet potato mixture to greased 8x8 baking dish. 

    4. Lay butter slices on top of casserole. 

    5. Cover with foil and bake at 350 degrees for 1 hour. 

    6. Remove foil and bake uncovered for 15 minutes.
