This all in one egg casserole is loaded with hashbrowns, sausage, eggs, cheese and veggies! Eat it with a fork or scoop it into tortillas and enjoy breakfast burritos!

Loaded egg casserole is the perfect solution to busy mornings. Bake it up and enjoy it all week long, eliminating the need to hit the drive thru or skip breakfast altogether.

How to Make Loaded Egg Casserole in the Oven

  • Start by browning your meat (I prefer breakfast sausage). While your meat is browning, steam your cauliflower rice (I buy the steamable bags to make life easier).
  • When sausage is brown, add in steamed cauliflower and continue cooking till moisture is evaporated.

  • In a separate pan, saute veggies.

  • Coat baking dish with oil (butter, coconut oil, olive oil, etc) and begin layering casserole.
  • Spread hashbrowns in bottom of dish.

  • Add sausage/cauliflower mixture on top of hashbrowns.

  • The next layer will be your veggies. I added veggies to half of the casserole to accommodate picky eats (don’t tell them about the cauliflower), but you can layer veggies on the whole casserole if picky eaters aren’t your reality.

  • Next, top with cheese (any cheese will work…this time I used colby jack).

  • In a bowl, whisk together milk, eggs, salt & pepper and then pour mixture on top of casserole.

  • The best part about this casserole is that it can be prepped ahead of time and then stored in the fridge for a day or 2 until ready to bake. I prefer to make it the night before, put it in the fridge and then bake it up the next morning.
  • This casserole bakes uncovered at 350 degrees for 1 hour. Then, I like to turn the oven to broil and cook for 5 minutes more to get it nice and crispy on top.

  • This casserole can be served as is or it can be made into burritos. Fill flour or corn tortillas with casserole and then top with salsa and cheese. Yum!

Ingredients

  • 4 cups frozen shredded hashbrowns
  • 1 lb ground sausage
  • 12 oz frozen cauliflower rice
  • 3 cups diced bell peppers
  • 2 cups shredded cheese
  • 6 eggs
  • 1 cup milk
  • 1/2 tsp pepper
  • 1 tsp salt

Instructions

  1. Brown sausage. Add in steamed cauliflower rice and saute till moisture is absorbed. 

    In a separate pan, saute peppers. 

    Grease a 9x13 inch baking dish. 

    Cover bottom of dish in hashbrowns. Layer sausage/cauliflower mixture on top. 

    Add bell peppers to half (or whole) casserole. 

    Cover in cheese. 

    Whisk together milk, eggs, salt & pepper and pour over mixture. 

    Bake at 350 degrees for 1 hour. 

    Turn oven to broil and continue cooking for 5 more minutes. 

    Serve as is or use mixture to make breakfast burritos.
