Salsa Chicken & Cauliflower Rice is an easy slow cooker meal. Frozen chicken & cauliflower rice thrown together with salsa & seasonings, cooked all day to perfection for a delicious, family friendly meal.
We have some variation of tacos every week at our house. This slow cooker chicken and ‘rice’ is any easy and healthy meat to have on hand to turn into taco’s, burritos, quesadillas or lettuce wraps. It’s another one of those meals that I love to make once and then serve multiple ways to make everyone happy! It’s also great to make on the weekend and then have for fast and healthy lunches throughout the week! I find that a little preparation goes a long way in eating healthy and staying on track!
Yes, this salsa chicken is grain free, gluten free and low carb. If you want to serve it low carb style, I recommend skipping the traditional tacos and burritos and serve it with Cilantro Lime Cauliflower Rice. It’s also delicious stuffed inside lettuce cups with a side of bell peppers! All low carb options, but full of flavor and will keep you full!
You know what makes Taco night even better? Margaritas of course! Don’t forget the margaritas.
Place chicken and cauliflower rice in crockpot.
Cover in salsa and taco seasoning.
Cook on low for 6-8 hours.
Shred chicken and serve in tacos, burritos, quesadillas or lettuce wraps.
