Spicy Shrimp Stir Fry

Spicy Shrimp Stir Fry is an easy, one pan meal, packed full of veggies and flavor, including garlic & crushed red pepper.

Easy dinners are my jam and even better when they are cooked in one pan in less than 30 minutes! Serve this stir fry over traditional rice or the best Cauliflower Fried Rice and you have yourself a one bowl meal! Easy clean up and easy to pack away the leftovers for lunch the next day! This meal is naturally gluten, grain and dairy free and also works well with a Paleo or Whole 30 nutrition plan!

How To Make Shrimp Stir Fry On The Stovetop

  • To start, heat oil and garlic over medium heat in a large stovetop pan.
  • While oil is heating, prepare your carrots and asparagus. I used 3 large carrots and 20 stalks of asparagus, but feel free to use more or less, depending on how veggie heavy you want your meal to be.

  • Cut carrots into coins and asparagus into thirds.
  • Add carrots into oil and fry till they begin to get tender and golden brown, about 10-15 minutes.

  • When carrots are starting to get golden brown, add in asparagus, shrimp and crushed red pepper.

  • Cook till shrimp is done and asparagus is tender, about 10-15 minutes, mixing and flipping to cook both sides of shrimp.

Ingredients

  • 20 shrimp peeled & deveined
  • 20 stalks asparagus cut into thirds
  • 2-3 large carrots cut into coins
  • 2 tbsp oil
  • 3 cloves garlic crushed
  • 1/2 tsp crushed red pepper

Instructions

  1. Heat olive oil and garlic over medium heat in a large stovetop pan.

    Add carrots to oil and cook till tender and golden brown, about 10-15 minutes. 

    Add asparagus, shrimp & crushed red pepper to pan and cook till asparagus is tender and shrimp is done (turning shrimp often, to evenly cook both sides), about 10-15 minutes. 

    Season with salt as needed and serve over Cauliflower Fried Rice.
