I haven’t always loved brussels sprouts, I didn’t even use to like them. Several years ago I was traveling with a group of girlfriends and we ordered brussels sprouts at dinner one night. They were DELICIOUS and to this day, we all still talk about the brussels sprouts from that trip. This recipe is my attempt to recreate that meal and not to toot my own horn, but I did good!
Oftentimes, brussels sprouts get a bad wrap. If you don’t like them, it’s likely because your only experience has been mushy ones that have been cooked to death, right?! Do yourself a favor and try them one more time and then report back.

Heat oil and garlic in a large skillet on stovetop.
Add in onion & brussels sprouts, reduce to low heat & cover. Cook till sprouts are tender, about 20 minutes, stirring every 5 minutes.
Add in maple syrup, crushed red pepper & salt, stirring well.
Add in bacon crumbles and stir to combine.
Continue cooking over low heat, uncovered, for 5 more minutes.
Remove from heat & serve hot.
