Meals For One {sweet potato hash}

Meals for one, on a budget, that are healthy and delicious! Single serving, oven baked sweet potatoes, sausage and veggies, ready in 30 minutes!

  • 1 small sweet potato peeled & diced
  • 1 chicken sausage diced
  • 1-2 cups veggies
  • 1 tbsp olive oil
  • seasonings


  1. On a large cutting board, peel and dice sweet potato. Cut chicken sausage length wise and then quartered. Dice veggies. 

    Dump ingredients into an 8x8 inch baking dish, drizzle with olive oil and then season {I love garlic and crushed red pepper}. 

    Bake at 400 degrees for 30 minutes. 

    Remove and enjoy!
