Cilantro Lime Cauliflower Rice

Cilantro Lime Cauliflower Rice makes an excellent low-carb, grain free addition to taco night. It's the perfect side dish for any Mexican entree and works great as the base for a build your own burrito bowl.

  • 12 oz cauliflower rice frozen steamable bag
  • 1/2 tbsp olive oil
  • 1 garlic clove crushed
  • 1 lime
  • 1/2 cup chopped cilantro about 1 bunch


  1. Steam cauliflower rice in microwave. 

    Chop cilantro and cut lime into fourths. 

    Heat olive oil and garlic on stovetop. 

    Add in riced cauliflower and cook on medium heat for 5 minutes. 

    Remove pan from heat, add in cilantro and fresh squeezed lime. 

    Stir well.
