Following direction on riced cauliflower, steam bag & then wring out all excess moisture by placing cauliflower in a clean kitchen towel.
In a large mixing bowl, combine egg, mozzarella, salt, garlic powder, Italian seasoning and arrowroot flour. Add in cauliflower and mix well.
Line a perforated pizza pan with parchment paper and scoop cauliflower mixture, using a tbsp, onto paper. Using hands, flatten each tbsp of mixture into a disc.
Bake pizza bites at 400 degrees for 20 minutes, removing after 10 minutes to flatten each pizza crust down with the back of a spatula.
Remove from oven and top pizzas with 1 tsp of marinara, your favorite toppings and 1 tsp of parmesan/mozzarella cheese blend.
Bake for 5 minutes more till cheese is melted.
Remove and serve immediately.
