Easy Chocolate Crinkle Cookies

Easy Chocolate Crinkle Cookies are just like the ones your grandma use to make, but better! These cookies are gluten free and packed with protein (almond butter + almond flour).

Ingredients

  • 1 stick butter softened
  • 1/2 cup coconut sugar
  • 3/4 cup almond butter
  • 1 egg
  • 1 1/2 cups almond flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup pure cocoa powder
  • 1/4 cup dark chocolate chips
  • 1/2 cup powdered sugar

Instructions

  1. Cream butter, coconut sugar & almond butter in medium mixing bowl, using a hand mixer. 

    Add egg, blend to combine. 

    Add almond flour, baking soda, salt & cocoa and blend on low speed. 

    Stir in dark chocolate chips with a spoon. 

    In a separate bowl, add powdered sugar for coating cookies. 

    Line a baking sheet with parchment paper. 

    Using a small spoon, scoop cookie dough into hand and roll to form small balls. 

    Roll cookie dough ball in powdered sugar, coating well. 

    Place cookies on baking sheet, leaving at least 2 inches between each cookie.

    Bake at 350 degrees for 10 minutes. 

    Remove from oven and let cookies sit on baking sheet for 5 minutes before transferring to cooling rack.
