I’ve always loved Blackened Chicken. If it’s on the menu, I’m ordering it. I was pleased to find out that it’s super simple to make at home and I love this version because it reheats well for leftovers. It’s a great family meal (my family loves it with potatoes and veggies), but I’m also known to make it on Sunday to have for my lunches all week!
You probably can (you can buy most anything), but this blend is so easy to make yourself and uses seasonings that you most likely already have in your cabinet anyway! Plus, when you make it yourself, you’ll know exactly what’s going into it and it won’t have any unnecessary ingredients or preservatives!

Remove from oven and serve immediately or let cool off and store in an airtight container in the refrigerator to use for quick and easy meals throughout the week!
One of my favorite ways to eat this chicken is over sautéed sweet potatoes, brussels sprouts & spinach (just chop potatoes and veggies and cook in a stovetop pan with olive oil). It’s also delicious in a spinach salad with berries and blackened chicken on top! Those are my two go to lunches when I have this chicken on hand, ready to go in the fridge!

Cut chicken into 1 inch cubes and place in a 9x13 inch baking dish.
Drizzle chicken with olive oil.
In a small bowl, combine seasonings and then generously coat chicken with seasoning, mixing to make sure that all sides are coated.
Bake chicken at 350 degrees for 30 minutes.
Turn oven to broil and continue cooking for 5 more minutes to crisp up the outside of the chicken.
Serve hot or let cool and store in an airtight container for fast and easy lunches all week.
