blackened chicken

I’ve always loved Blackened Chicken. If it’s on the menu, I’m ordering it. I was pleased to find out that it’s super simple to make at home and I love this version because it reheats well for leftovers. It’s a great family meal (my family loves it with potatoes and veggies), but I’m also known to make it on Sunday to have for my lunches all week!

Can You Buy Blackened Seasoning?

You probably can (you can buy most anything), but this blend is so easy to make yourself and uses seasonings that you most likely already have in your cabinet anyway! Plus, when you make it yourself, you’ll know exactly what’s going into it and it won’t have any unnecessary ingredients or preservatives!

How To Make Blackened Chicken

If you like simple chicken recipes, this is the recipe for you!

  • To start, cut your boneless, skinless chicken breasts into 1 inch cubes.
  • Place chicken cubes in a 9×13 inch baking dish and drizzle with olive oil.
  • In a small container, combine seasonings (paprika, oregano, cayenne pepper, onion powder, garlic powder, salt & pepper).

blackened seasoning

  • Generously coat chicken with seasoning, mixing as you go, so you cover all sides of the chicken.

  • Place chicken in oven and bake at 350 degrees for 30 minutes.
  • After 30 minutes, chicken should be cooked all the way through (internal temperature of at least 165 degrees, if you don’t have a kitchen thermometer, change that!).
  • Turn oven to broil and continue cooking for 5 more minutes to crisp up the outside of the chicken.

Remove from oven and serve immediately or let cool off and store in an airtight container in the refrigerator to use for quick and easy meals throughout the week!

One of my favorite ways to eat this chicken is over sautéed sweet potatoes, brussels sprouts & spinach (just chop potatoes and veggies and cook in a stovetop pan with olive oil). It’s also delicious in a spinach salad with berries and blackened chicken on top! Those are my two go to lunches when I have this chicken on hand, ready to go in the fridge!
