Roasted Green Beans with Garlic & Parmesan are a delicious, easy and healthy side dish. They are roasted in olive oil and garlic powder and then topped with parmesan and broiled till crispy!

I think it’s a very common misconception that in order to get the health benefits of eating vegetables, they need to be boring and bland. This is so far from the truth and it’s why so many people *think* they don’t like vegetables. You have to season and fancy them up! Veggies are delicious, you just have to figure out how you prefer them! It’s better to top your veggies with a little cheese and eat them vs not eating them at all because you don’t *like* them!

Another misconception is that fresh is always best. While it is important to look at the ingredients on the frozen and canned versions (and make sure that they are, in fact, just vegetables and no fillers), fresh is not superior as far as health goes. While in some cases, fresh does taste better, I have found that frozen is more cost effective and tastes just as good! I love buying frozen and being able to keep it in the freezer for longer periods of time and not having to worry about it going bad in the refrigerator in a week. Tell me that’s not just me, right? I go to the store with such good intentions, but then sometimes those good intentions rot…hahaha.

How to Roast Greens On A Sheet Pan

This is the easiest side dish and I make it several times each week and never get sick of it! Even better that you don’t have to dirty ANY dishes…

  • Start by lining a baking sheet with aluminum foil.
  • Pour 4 cups of frozen green beans on foil (If you are a Costco member, buy their organic green beans in the frozen section. They are the best of the best, promise!)
  • Drizzle green beans with olive oil and garlic powder and then mix, using your hands, so that the green beans are evenly coated in oil and seasoning.
  • After beans are well mixed, make sure they are spread out evenly on the pan.

  • Place pan in oven and bake at 350 degrees for 20 minutes.
  • Remove from oven, sprinkle with parmesan cheese and then place back in oven to broil for 5 minutes.

I’m not kidding when I say that I am obsessed with these green beans. Sometimes I make them as an afternoon snack because I love them so much! If they are ready before dinner is done, this happens…

  • After devouring the green beans, simply remove the aluminum foil and throw it in the trash! The foil will have protected your pan and you will have no additional dishes from this side dish!

Ingredients

  • 4 cups green beans frozen
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 cup parmesan cheese

Instructions

  1. Line a baking sheet with aluminum foil. 

    Pour green beans on foil and drizzle with olive oil and garlic powder. 

    Mix well with hands so that green beans are well coated and then spread beans back out evenly on pan. 

    Bake at 350 degrees for 20 minutes. 

    Remove from oven, sprinkle with parmesan cheese and then place back in oven and broil for 5 minutes.
