As a fitness and nutrition mentor (find me HERE), I hear all the time, that people {especially women} want to eat healthy or make a lifestyle change, but their family isn’t on board. Cooking separate meals can be a total pain in the ass, I get it, but sometimes it really is worth the effort. In the long run, I do recommend slowly transitioning your entire family to a healthier eating lifestyle, but as you are making changes, it’s always nice to have a quick, easy and healthy meal in your back pocket that you can whip up for just you!

Sweet Potatoes, Chicken Sausage and Veggies is a staple that I eat several times each week and falls perfectly in the “Meals For One” category. It works great with most meal plans and is naturally gluten, grain and dairy free {just make sure to read your chicken sausage label}. If you’re on a plan where you measure your food, just measure portions prior to cooking so that you end up with a single serving meal. Want to make sure you have leftovers, just double the batch. If you’re following a low carb plan and it’s low carb day or you don’t eat carbs at dinner, just replace the sweet potatoes with an extra helping of veggies. So many options, all delicious!

How To Make A Meal For One

  • To start, gather your key ingredients. Sweet potato, chicken sausage and veggie of choice {I’ve been loving Brussels Sprouts lately}.
  • I prefer to peel the skin off my sweet potatoes because they crisp up better, but you can leave the skin on too.
  • On a cutting board dice your potato, chicken sausage & veggies. I like to dice them pretty small because they cook faster and get crispier.

  • Dump everything into an 8×8 inch baking dish, drizzle with olive oil and your favorite seasonings {I like garlic and crushed red pepper seasoning} and toss to coat.

  • Bake at 400 degrees for 30 minutes.
  • Remove from oven and enjoy!

Ingredients

  • 1 small sweet potato peeled & diced
  • 1 chicken sausage diced
  • 1-2 cups veggies
  • 1 tbsp olive oil
  • seasonings

Instructions

  1. On a large cutting board, peel and dice sweet potato. Cut chicken sausage length wise and then quartered. Dice veggies. 

    Dump ingredients into an 8x8 inch baking dish, drizzle with olive oil and then season {I love garlic and crushed red pepper}. 

    Bake at 400 degrees for 30 minutes. 

    Remove and enjoy!
