Low Carb Pizza Stuffed Peppers are a simple way to get your pizza craving fulfilled without grains or gluten! Marinara and your favorite pizza toppings stuffed inside a bell pepper, topped with cheese and baked to perfection!
Living a healthy lifestyle isn’t about giving up your favorite foods, but it does help to have healthier ways to enjoy your favorites, like pizza. These peppers have all the delicious flavors of pizza, without all the carbs and empty calories that are often found in the crust. Even better, they are so simple to make for a single serving dinner or lunch! I love having all the ingredients on hand to make them throughout the week for myself and I enjoy them so much, that sometimes I make this while my family enjoys a more traditional pizza, like THIS one.
First of all, I think it’s really important to remember that your body NEEDS carbs. Carbs serve a purpose, they gives us energy. Instead of focusing on eating low carb, I personally think it’s more important to focus on the kinds of carbs you are eating, not the amount! When looking at carbs, the ones filled with fiber are your healthiest option. A great guideline is to pick carbs that have at least 1 gram of fiber for every 10 grams of carbs. With that said, there are multiple ways to enjoy a lower carb pizza. These stuffed peppers are one way and my other favorite way is Cauliflower Pizza Crust Bites.
These peppers are so easy to make. I like to cook a batch of ground sausage and mushrooms and then keep it in the fridge so that I can have a healthy, easy and delicious lunch ready to throw together each day.
Line a baking sheet with aluminum foil.
Wash and slice bell pepper in half, clean out seeds.
Place pepper on baking sheet. Spread 2 tbsp of marinara (1 tbsp/half) in bottom of each pepper. Fill pepper with 2/3 cup of pizza topping (1/3 in each half).
Place in oven and bake at 400 degrees for 20 minutes.
Remove pepper from oven and sprinkle 2 tbsp of cheese (1 tbsp/half) on top of peppers.
Place back in oven and bake for 5 more minutes, till cheese is melted.
