Oven Roasted Potatoes are crispy on the outside, soft on the inside and perfectly seasoned with flavors of BBQ. An easy side dish for all your summer meals.
We eat potatoes often and while my kid’s prefer mashed potatoes (with the exception of one child, who will only eat potatoes in the form of french fries), I like to serve up some variety from time to time. These potatoes are easy to make and perfect to throw in the oven while the rest of dinner is cooking on the grill. They go great with burgers, chicken and our favorite, pork chops! If you’re looking for a side dish that your whole family will love, these are it!
Any potatoes will work, but for this dish, I prefer using baby red potatoes and golden yellow potatoes. You can find them at any grocery store, but I like to buy a big bag of them at Costco.
This dish is so easy to make and mixes and bakes in the same pan {which is always a major plus in my book, less dishes}.
Dice baby potatoes {I use red & golden baby potatoes} into small chunks (make sure you measure potatoes after they are cut).
Pour potatoes into a 9x13 inch baking dish and drizzle with olive oil and then toss to coat.
In a small bowl, mix seasonings and then pour over potatoes and mix well so that potatoes are evenly coated with seasoning.
Bake at 400 degrees for 40 minutes till potatoes are crisp on the outside.
Serve hot!
