Crispy Bacon Wrapped Chicken with Chilis

Crispy Bacon Wrapped Chicken comes together quickly and is stuffed with a delicious mixture of cream cheese, mozzarella and green chilis.

How do you cook Bacon Wrapped Chicken?

  • This chicken is prepared and then cooked in the oven for about 40 minutes at 375 degrees.
  • The key to getting the bacon crispy is to broil after chicken is cooked through.

How to prepare Bacon Wrapped Chicken

  • You’ll begin by combining cream cheese, shredded mozzarella and diced green chilies in a mixing bowl (I find it’s easiest to combine using a fork).

  • After mixture is combined, set aside and prepare your chicken.
  • Line a baking sheet with aluminum foil and lay chicken flat on foil.
  • Top each chicken breast with a heaping spoonful of the cheese mixture.
  • Take a slice of bacon and wrap around chicken and filling, helping to secure filling in place. Repeat until all chicken is prepared.

  • Place in oven and bake at 375 degrees for 40 minutes or until chicken is cooked through and no longer pink.
  • Once baking is complete, turn oven to broil and broil until bacon is crispy and cheese is bubbly, about 5-8 minutes.
  • Remove from oven, serve with a side of veggies and enjoy!

Ingredients

  • 8 chicken breast tenders
  • 8 oz cream cheese
  • 1 cup mozzarella shredded
  • 4 tbsp diced green chilies
  • 8 slices bacon

Instructions

  1. Preheat oven to 375 degrees.

    In a mixing bowl, combine cream cheese, mozzarella and diced green chilies. 

    Line a baking sheet with aluminum foil and lay chicken breast flat on foil. 

    Using a spoon, scoop and place the filling on top of each chicken breast, dividing filling evenly. 

    Wrap each chicken breast in a slice of bacon, wrapping around the chicken and filling to hold it together. 

    Bake for 40 minutes or until chicken is cooked through and no longer pink. 

    Once chicken is cooked through, turn oven to broil and continue cooking until bacon is crispy and cheese is bubbly, about 5-8 minutes.
