I love to pull out my crockpot or put together a quick casserole, especially in the winter, but after transitioning to a mostly gluten and grain free lifestyle I ran into one recurring problem…..canned cream of mystery soups. They were called for over and over again in all my go to recipes. Instead of throwing in the towel on those family favorites, I created this. It would be a shame not to share. It’s simple, it’s easy and it’s the perfect substitute when a recipe calls for canned cream of chicken soup.

How to make Gluten Free Homemade Cream of Chicken Soup

  • Start by combining chicken broth and milk (I use whole milk, but it works with dairy free milk too) in a saucepan and bring to a low boil.
  • In a separate bowl, whisk together almond flour & seasonings and then whisk into saucepan.
  • Whisk over low heat for 10 minutes.

Cream of Chicken Substitute

  • If you need to make a grain free version, you’ll stop after this step. It will make a perfect substitute, but won’t be as thick.
  • To thicken soup, you’ll make a paste out of cornstarch and water.
  • In a small bowl mix together 1 tbsp cornstarch with 1 tbsp water. Mix until smooth and lump free.
  • Pour cornstarch mixture into soup and whisk. Soup will thicken very quickly.
  • Remove soup from heat and let cool before transferring to a glass jar and storing in the fridge, if not using right away.

Can you freeze homemade cream of chicken soup?

  • If you won’t be using your soup within 4 or 5 days, it is best to freeze it until you are ready to use it.
  • To thaw, remove from freezer and put in fridge. Separation will occur due to the dairy, but reheating soup on the stovetop, while whisking will remedy it.

Ingredients

  • 2 cups chicken broth
  • 1/2 cup milk
  • 3/4 cup almond flour
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 1/2 tsp dried parsley
  • 1 tsp salt
  • 1 tbsp cornstarch optional to thicken

Instructions

  1. Combine broth & milk in saucepan over low heat. 

    In separate bowl, whisk together almond flour, onion powder, garlic powder, pepper, dried parsley & salt. 

    Add dry ingredient mixture to saucepan. 

    Whisk over low heat for 10 minutes. 

    In separate bowl, mix together 1 tbsp cornstarch with 1 tbsp water till smooth. Add into saucepan. 

    Whisk continuously over low heat as soup thickens. 

    Remove from heat. Store in fridge for 4-5 days or freeze until ready to use.
