Serve it as a side dish or serve it as your main dish with additional protein added on top. Either way, just make sure you serve it!

How Do You Make The Best Cauliflower Rice?

Not only is this recipe the best, but it’s also the easiest. Using prepackaged, frozen veggies, helps eliminate the time of turning a head of cauliflower into cauliflower rice.

  • Start by heating your oil on the stovetop in a large pan.
  • While your oil is heating, dice up your celery and onion.
  • When oil is ready, add onion, celery and frozen pea/carrot blend into pan and saute over medium heat until veggies are tender, about 10 minutes.

  • While veggies are cooking, stream cauliflower rice following directions on bag (I buy frozen steamable bags).
  • When veggies are tender, push veggies to one side of pan, and add 2 beaten eggs into pan.

  • Continue cooking until eggs are scrambled. Then mix eggs into veggies well.
  • Next, add steamed cauliflower rice and coconut aminos (soy sauce can be substitued, if needed). Stir well.
  • Continue cooking over medium heat to combine flavors and to cook out some of the moisture, about 10 minutes. Season with salt & pepper.

This makes an excellent, veggie filled side dish, but I also like eating it as a rice bowl. I put Cauliflower Fried Rice in the bottom and then here, I reheated a leftover pork chop and added it to the top. Super simple, easy and delicious meal!

Ingredients

  • 24 oz frozen cauliflower rice
  • 12 oz frozen peas & carrots
  • 1 onion diced
  • 4 stalks celery diced
  • 2 eggs beaten
  • 2 tbsp olive oil
  • 3 tbsp coconut aminos

Instructions

  1. Heat olive oil, over medium heat, in large stovetop pan. 

    While oil is heating, dice onion and celery. 

    Add onion, celery and frozen peas & carrots into pan. Cook till tender, about 10 minutes. 

    While veggies are cooking, steam cauliflower rice according to directions on package. 

    Once veggies are tender, move to side of pan and add in 2 eggs, beaten. 

    Scramble eggs. Once done, combine veggies and eggs together in pan. 

    Add in steamed cauliflower rice and coconut aminos. 

    Continue cooking over medium heat so flavors combine and mositure cooks out, about 10 minutes. 

    Season with salt & pepper.
