This Cauliflower Fried Rice has been a family favorite since going mostly grain and gluten free 4 years ago. It tastes like comfort food, but is packed full of vegetables. Serve it as a side dish or serve it as your main dish with additional protein added on top. Either way, just make sure you serve it!
Not only is this recipe the best, but it’s also the easiest. Using prepackaged, frozen veggies, helps eliminate the time of turning a head of cauliflower into cauliflower rice.
This makes an excellent, veggie filled side dish, but I also like eating it as a rice bowl. I put Cauliflower Fried Rice in the bottom and then here, I reheated a leftover pork chop and added it to the top. Super simple, easy and delicious meal!

Heat olive oil, over medium heat, in large stovetop pan.
While oil is heating, dice onion and celery.
Add onion, celery and frozen peas & carrots into pan. Cook till tender, about 10 minutes.
While veggies are cooking, steam cauliflower rice according to directions on package.
Once veggies are tender, move to side of pan and add in 2 eggs, beaten.
Scramble eggs. Once done, combine veggies and eggs together in pan.
Add in steamed cauliflower rice and coconut aminos.
Continue cooking over medium heat so flavors combine and mositure cooks out, about 10 minutes.
Season with salt & pepper.
