Easy Slow Cooker Carnitas are not an authentic carnitas recipe (we use pork chops), but they are loaded with flavor and perfect for making tacos, burrito bowls and salads.
I’m always looking to mix up taco night at our house and we always have pork chops in the freezer. I decided to try my hand at carnitas, using pork chops, and they were not only so easy to make, but they were also delicious!
This recipe could not be easier. All you do is add 3 ingredients to the slow cooker, cook on low all day long, shred and serve!
I love “cook once, serve twice meals” and this is a perfect example. The meal cooks all day in the slow cooker and then at dinner time, there are easy options to make everyone happy! I personally loved it as a burrito bowl. I used Cilantro Lime Cauliflower Rice as the base, loaded the pork on top, added some sauteed peppers & onion, fresh lime and then scooped it with chips. My husband and kids piled it into a tortilla and topped with sour cream, beans and cheese. The baby ate it plain, by the handful!
Place pork chops, green chili salsa & chopped cilantro in slow cooker.
Cook on low for 6-8 hours.
Remove pork chops from slow cooker and shred.
Return to slow cooker and mix well.
