Cilantro Lime Cauliflower Rice

Cilantro Lime Cauliflower Rice makes an excellent low-carb, grain free addition to taco night. It’s the perfect side dish for any Mexican entree and works great as the base for a build your own burrito bowl.

Chipotle burrito bowls are one of my all time favorites, but being able to make them at home, wins! We participate in Taco Tuesday almost every single week and this Cilantro Lime Cauliflower Rice takes every taco night up a notch!

Can You Buy Cauliflower Rice?

You can buy riced cauliflower at most grocery stores in the freezer section. While it is an option to prepare your own rice from a head of cauliflower, it’s a lot of work, makes a huge mess and I truly don’t believe it saves you money (and it certainly doesn’t save you time). In this case, I recommend the convenience of a prepackaged bag (just make sure the only ingredient is cauliflower).

How Do You Make Cilantro Lime Cauliflower Rice?

This recipe comes together quickly, with very little work!

  • Start by putting your steamable bag of cauliflower rice in the microwave (mine takes about 5 minutes, but follow the directions on your bag).
  • While your cauliflower is steaming, chop the cilantro and cut the lime into fourths.
  • In a large pan, on the stovetop, heat olive oil and crushed garlic clove.
  • When cauliflower rice is done steaming, remove from the microwave, open bag (be careful of the steam) and pour into stovetop pan.
  • Stir well and cook for about 5 minutes in the olive oil and garlic.
  • Remove pan from heat, add cilantro, squeeze in fresh lime and stir well.

I love this “rice” as the base for my burrito bowls. I start with cilantro lime cauliflower rice, add in sauteed peppers and onions, taco seasoned ground beef, cheese and top with plantain chips for a nice crunch.
