Cilantro Lime Cauliflower Rice makes an excellent low-carb, grain free addition to taco night. It’s the perfect side dish for any Mexican entree and works great as the base for a build your own burrito bowl.
Chipotle burrito bowls are one of my all time favorites, but being able to make them at home, wins! We participate in Taco Tuesday almost every single week and this Cilantro Lime Cauliflower Rice takes every taco night up a notch!
You can buy riced cauliflower at most grocery stores in the freezer section. While it is an option to prepare your own rice from a head of cauliflower, it’s a lot of work, makes a huge mess and I truly don’t believe it saves you money (and it certainly doesn’t save you time). In this case, I recommend the convenience of a prepackaged bag (just make sure the only ingredient is cauliflower).
This recipe comes together quickly, with very little work!
I love this “rice” as the base for my burrito bowls. I start with cilantro lime cauliflower rice, add in sauteed peppers and onions, taco seasoned ground beef, cheese and top with plantain chips for a nice crunch.
Steam cauliflower rice in microwave.
Chop cilantro and cut lime into fourths.
Heat olive oil and garlic on stovetop.
Add in riced cauliflower and cook on medium heat for 5 minutes.
Remove pan from heat, add in cilantro and fresh squeezed lime.
Stir well.
