Parmesan Chicken Potatoes & Zucchini is an easy one pan dinner. Oven baked, till crispy and golden brown, bursting with flavor in every bite.

I think all mom’s can agree that one pan dinners are the best. Healthy, easy and delicious…I have it all covered in this meal and it happens to be both gluten free and grain free too. It’s perfect for a weeknight meal, but even better to serve to your weekend dinner guests with a glass of red wine!

How To Make Parmesan Chicken On A Sheet Pan

  • To start, gather your zucchini, potatoes and chicken breasts. I prefer golden sweet potatoes, but any kind of potato will work.

  • Next, dice your zucchini into 1/2 inch cubes.
  • Dice potatoes (with or without the skin, your choice), into 1/2 to 1 inch cubes. I prefer to peel my potatoes first and bake without the skin because they get crispier.
  • Cut chicken breasts into 1 inch cubes.
  • Place diced zucchini, potato and chicken breast into a large mixing bowl, drizzle with olive oil and mix well.
  • Next, prepare the coating by combining almond flour, parmesan cheese, salt, pepper, garlic powder and paprika in a small mixing bowl.

  • Add parmesan mixture to zucchini mixture and mix till everything is well coated.
  • Line a large, rimmed baking sheet with aluminum foil and spread mixture evenly on baking sheet.

  • Bake at 400 degrees for 50 minutes, till chicken reaches an internal temperature of 165 degrees. I recommend keeping a meat thermometer in your kitchen, so easy to use and gives you peace of mind (food poisoning sucks!).
  • Remove from oven and serve! The leftovers (if you have any) make a fast and easy lunch for the rest of the week!

Ingredients

  • 2-3 chicken breasts cubed
  • 3 zucchinis diced
  • 2 potatoes diced
  • 2 tbsp olive oil
  • 1/2 cup almond flour
  • 1 cup parmesan cheese shredded
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika

Instructions

  1. Dice zucchini and potatoes (peeled or unpeeled, your preference) into 1/2 inch cubes. 

    Cut chicken breast into 1 inch cubes.

    Add zucchini, potatoes and chicken breast into large mixing bowl, add olive oil and mix well. 

    In a small mixing bowl, combine almond flour, parmesan, salt, pepper, garlic powder and paprika. 

    Pour parmesan mixture over zucchini mixture and mix well till everything is coated. 

    Line a baking sheet with aluminum foil and pour mixture on baking sheet, spreading evenly. 

    Bake at 400 degrees for 50 minutes till golden brown and chicken reaches internal temperature of 165 degrees.

  1. I made this recipe tonight and it was fantastic!! It was easy to make with excellent directions. But the best part was how delicious it was!
