Parmesan Chicken Potatoes & Zucchini is an easy one pan dinner. Oven baked, till crispy and golden brown, bursting with flavor in every bite.
I think all mom’s can agree that one pan dinners are the best. Healthy, easy and delicious…I have it all covered in this meal and it happens to be both gluten free and grain free too. It’s perfect for a weeknight meal, but even better to serve to your weekend dinner guests with a glass of red wine!
If you love simple dinners and zucchini as much as I do, I also recommend giving my Zucchini Casserole a try!
Dice zucchini and potatoes (peeled or unpeeled, your preference) into 1/2 inch cubes.
Cut chicken breast into 1 inch cubes.
Add zucchini, potatoes and chicken breast into large mixing bowl, add olive oil and mix well.
In a small mixing bowl, combine almond flour, parmesan, salt, pepper, garlic powder and paprika.
Pour parmesan mixture over zucchini mixture and mix well till everything is coated.
Line a baking sheet with aluminum foil and pour mixture on baking sheet, spreading evenly.
Bake at 400 degrees for 50 minutes till golden brown and chicken reaches internal temperature of 165 degrees.
I made this recipe tonight and it was fantastic!! It was easy to make with excellent directions. But the best part was how delicious it was!
