Slow Cooker Chicken Pot Pie – Gluten Free

Slow Cooker Chicken Pot Pie is a simple one pot meal that the whole family will enjoy. It’s hearty, healthy & packed with veggies!

Chicken pot pie is the ultimate comfort food and this healthier, slow cooker version is no exception. When cold winter days have you craving comfort food, but New Years Resolution have you craving healthy, this is the perfect meal to satisfy both needs!

How to Make Slow Cooker Chicken Pot Pie

  • If you’re using a rotisserie chicken (I did), shred your chicken and throw it in the slow cooker.
  • If you’re using frozen chicken breasts (this works great too) place them at the bottom of your slow cooker.
  • Next, add in your diced tomatoes and frozen vegetables (I used green beans, onion, carrots, peas and corn – I know corns a carb, not a veggie, remain calm).
  • Gluten Free Homemade Cream of Chicken Soup is the next ingredient to add in and it is KEY. You may be tempted to buy the canned version for convenience, but trust me, don’t do it! Make it homemade. It’s worth 10 minutes of your time, promise!
  • Add in chicken broth, salt & pepper.

  • Set your slow cooker to low with the lid on and cook for 6-8 hours. I like to stir it throughout the day, but if you aren’t home and unable to, you can just give it a good stir at the end before serving.
  • This pot pie is fantastic served as is, but you can also serve it with a sprinkle of cheese and your favorite biscuits.

Ingredients

  • 1 rotisserie chicken shredded
  • 2 potatoes diced
  • 36 oz frozen vegetables
  • 16 oz homemade cream of chicken soup
  • 4 cups chicken broth
  • 1 tsp salt
  • 1 1/2 tsp pepper

Instructions

  1. Add all ingredients to slow cooker. 

    If using frozen chicken breasts in place of rotisserie chicken, place chicken (3-4 breasts) at bottom of the cooker. 

    Cover, set to low and cook for 6-8 hours. 

    Mix well (if using chicken breasts, shred before serving) and serve hot.

    Serve as is or with a sprinkle of cheese and your favorite biscuits.
