Slow Cooker Chicken Pot Pie is a simple one pot meal that the whole family will enjoy. It’s hearty, healthy & packed with veggies!
Chicken pot pie is the ultimate comfort food and this healthier, slow cooker version is no exception. When cold winter days have you craving comfort food, but New Years Resolution have you craving healthy, this is the perfect meal to satisfy both needs!
Add all ingredients to slow cooker.
If using frozen chicken breasts in place of rotisserie chicken, place chicken (3-4 breasts) at bottom of the cooker.
Cover, set to low and cook for 6-8 hours.
Mix well (if using chicken breasts, shred before serving) and serve hot.
Serve as is or with a sprinkle of cheese and your favorite biscuits.
